Cacao Process
Allows the flavor of the beans to intensify.
It is crushed until obtaining small pieces of seeds without shell.
Cocoa beans are ground to obtain cocoa paste.
Cocoa is pressed to extract cocoa butter.
Add other products, such as: sugar, vanilla, cinnamon etc…
Using stone mills we reduce the particles to achieve a creamy texture.
Conching consists of reducing the acidity of chocolate.
The chocolate paste is poured into molds that give it the final shape.
